Ingredients/Components
- vanilla - 3/4 tsp
- milk - 3 Tbsp
- all-purpose flour, sifted - 2 c
- salt - 3/4 tsp
- cocoa - 1/4 c
- confectioners sugar
- baking powder
- shortening - 1 c
- powdered sugar - 1/4 c
- finely ground pecans - 3/4 c
- rum flavor - 1/2 tsp
How to make brown-eyed susans:
Frosting:2 Tbsp. shortening1/4 c. cocoa1/8 tsp. salt3 Tbsp. milk1 tsp. milk3/4 tsp. vanilla1 3/4 c. confectioners sugar Preheat oven to 400°. Cream shortening and sugar. Add vanilla and rum flavoring.Sift flour with baking powder and salt; add to creamed mixture. Add pecans. Mix at high speed to blend dough. Shape in 1-inch balls. Place on ungreased cookie sheets; flatten. Bake at 400° for about 10 minutes. Cool and frost.
For frosting, melt shortening in saucepan. Remove from heat; stir in cocoa and salt. Mix in milk and vanilla. In a small mixer bowl, stir cocoa mixture into sugar. Beat at medium speed of electric mixer until smooth and creamy. Put a small amount of frosting in center of each cookie and top with pecan half.
