Bran muffins
Ingredients/Components
- sugar
- salt - 2 tsp
- flour - 4 c
- oil - 1 c
- soda - 5 tsp
- buttermilk - 1 qt
- chopped walnuts optional - 1 c
- whole eggs - 4 item
- box Raisin Bran cereal - 1 oz
How to make bran muffins:
Beat the eggs and sugar with an electric mixer. Add the oil and buttermilk. Mix together the dry ingredients, then add to above mixture. Stir the dry ingredients in with a spoon; do not use mixer for this addition. Refrigerate overnight before using. Can be kept 6 weeks in refrigerator. Bake at 375° for 20 minutes in greased muffin tins. Makes 5 dozen regular muffins or 8 dozen tiny muffins.Variations of cereals can be used; just be sure it is a 15-ounce box.
