  • sugar
  • salt - 2 tsp
  • flour - 4 c
  • oil - 1 c
  • soda - 5 tsp
  • buttermilk - 1 qt
  • chopped walnuts optional - 1 c
  • whole eggs - 4 item
  • box Raisin Bran cereal - 1 oz

How to make bran muffins:

Beat the eggs and sugar with an electric mixer. Add the oil and buttermilk. Mix together the dry ingredients, then add to above mixture. Stir the dry ingredients in with a spoon; do not use mixer for this addition. Refrigerate overnight before using. Can be kept 6 weeks in refrigerator. Bake at 375° for 20 minutes in greased muffin tins. Makes 5 dozen regular muffins or 8 dozen tiny muffins.

Variations of cereals can be used; just be sure it is a 15-ounce box.
