Ingredients/Components

  • cinnamon - 1/2 tsp
  • baking powder - 1 Tbsp
  • vegetable oil - 3 Tbsp
  • all-purpose flour
  • skim milk - 1 c
  • salt optional - 1/2 tsp
  • fresh or frozen blueberries - 1 c
  • uncooked rolled oats - 1 c
  • egg substitute or 1 egg, beaten - 1/4 c
  • brown sugar substitute or brown sugar - 1/4 c

How to make blueberry oat muffins:

Combine dry ingredients. Add milk, egg and oil. Stir until moist. Fold in blueberries. Fill muffin pans sprayed with Pam. Bake at 425° for 25 to 30 minutes.
