Blueberry coffee cake
Ingredients/Components
- butter, softened - 1/3 c
- sugar - 1 c
- milk - 1 c
- salt - 1 tsp
- flour - 2 c
- baking powder - 3 tsp
- egg - 1 item
- powdered sugar
- lemon juice - 1 2
- grated lemon peel - 1 tsp
- fresh or frozen blueberries, thawed and well drained divided - 2 c
How to make blueberry coffee cake:
Glaze:1 c. powdered sugar1 tsp. grated lemon peel1 to 2 Tbsp. lemon juice Glaze: Mix together.Heat oven to 350°. Beat together all ingredients except for the blueberries on low speed for 30 seconds. Beat on medium speed, scraping bowl occasionally 2 minutes. Spread half of the batter in greased oblong pan, 13 x 9 x 2-inch or square pan, 9 x 9 x 2-inch. Sprinkle with 1 cup blueberries. Top with remaining batter; sprinkle with 1 cup blueberries. Bake oblong about 35 minutes, square about 45 minutes. Drizzle warm coffee cake with glaze.
