Ingredients/Components
- flour
- sugar
- baking powder - 2 tsp
- salt - 1 tsp
- butter - 2/3 c
- eggs, separated - 2 item
- milk - 1 c
- blueberries - 1 c
How to make blueberry coffee cake:
Sift together flour and sugar. Cut in butter. Reserve 3/4 cup of mixture for topping. Add baking powder, salt, egg yolks and milk to remainder of batter. Beat for 3 minutes on low speed. Beat egg whites until stiff; fold into mixture. Spread in baking pan. Arrange blueberries on top. Sprinkle with reserved 3/4 cup mixture.
