- blueberries - 2 c
- sugar - 3/4 c
- margarine - 1/4 c
- egg - 1 item
- milk - 1/2 c
- all-purpose flour - 2 c
- baking powder - 2 tsp
- salt - 1/2 tsp
- flour - 1/3 c
- cinnamon - 1/2 tsp
How to make blueberry buckle:
Crumb Topping:1/2 c. sugar1/3 c. flour1/2 tsp. cinnamon1/4 c. margarine In medium bowl combine topping ingredients. Cut margarine into fine crumbs. Preheat oven to 375° (if using glass pan, to 350°).Prepare batter in large bowl. Combine sugar, margarine and egg; beat at high speed until light and creamy Add flour, baking powder and salt, reduce speed and add milk slowly until smooth. Gently stir in berries by hand. Spread batter in pan, sprinkle crumb topping evenly. Bake 45 to 50 minutes.
