Blackberry cobbler
Ingredients/Components
- milk - 1 c
- butter or margarine - 1/3 c
- water - 2 T
- baking powder - 1 T
- all-purpose flour - 1 c
- sugar, divided - 1 c
- fresh or frozen blackberries* - 3 c
- Cool Whip, chocolate syrup or ice cream as optional topping garnishes - 1 item
How to make blackberry cobbler:
*Blueberries, strawberries or raspberries can be substituted for the blackberries.Preheat oven to 350°. Thaw berries, if frozen, but do not drain. In a large bowl, combine berries, 1/4 cup sugar, and 2 tablespoons water; let stand 5 minutes. In a 9 x 9 x 2-inch baking pan, melt butter in a 350° oven. In a medium mixing bowl, stir together flour, 3/4 cup of sugar, and baking powder; stir in milk. Remove pan from oven and pour batter on top of melted butter. Spoon undrained berries on top of batter. Bake at 350° for 40 minutes or until a toothpick comes out clean. Cool slightly. If desired, top with Cool Whip, chocolate syrup or ice cream.
