  • can sliced or diced beets - 1 lb
  • cornstarch - 1 tsp
  • orange marmalade - 3 Tbsp
  • vinegar - 1 Tbsp
  • salt - 1/4 tsp
  • butter or margarine - 1 Tbsp

How to make beets in orange sauce:

Drain beets, reserving 1/3 cup liquid. In medium saucepan, gradually stir reserved beet liquid into cornstarch to make a smooth mixture. Add orange marmalade, vinegar and salt. Cook over low heat, stirring constantly, until mixture thickens and comes to a boil. Add butter and stir until melted. Add beets and stir gently over low heat until evenly glazed and heated through. Makes 3 to 4 servings.
