Ingredients/Components

  • cornstarch - 2 Tbsp
  • clove garlic, minced - 1 item
  • sliced fresh mushrooms - 2 c
  • onion, chopped - 1/2 c
  • tomato paste - 1 Tbsp
  • instant beef bouillon granules - 1 tsp
  • hot cooked noodles - 2 c
  • vegetable cooking spray - 1 item
  • hot tap water - 1/3 c
  • carton plain nonfat yogurt - 1 oz
  • shredded raw carrot - 1/2 c
  • boneless beef top round steak, cut 3/4-inch thick - 3/4 lb

How to make beef stroganoff:

Trim separable fat from steak. Partially freeze the beef. Thinly slice, across the grain, into bite size strips. In a small bowl combine yogurt and cornstarch. Stir in water, tomato paste and bouillon; set aside.

Spray a cold large skillet with vegetable spray. Preheat the skillet over medium heat. Quickly brown the meat. Remove the meat from the skillet. Add mushrooms, carrots, onion and garlic to the skillet. Cook and stir until the onion is tender. Add meat to the vegetable mixture. Add the yogurt mixture. Cook and stir until mixture is thickened and bubbly. Serve over hot noodles. Yields 4 (1 1/2-cup) servings.
