  • sugar - 1 c
  • cinnamon - 3/4 tsp
  • vanilla extract - 1 tsp
  • salt - 1 tsp
  • nutmeg - 1/2 tsp
  • baking soda - 1/2 tsp
  • egg - 1 item
  • all-purpose flour
  • soft margarine - 3/4 c
  • raw quick-cooking oats
  • mashed ripe bananas 3 to 4 small bananas

How to make banana-oatmeal cookies:

Sift flour with salt, soda, nutmeg and cinnamon. In a large bowl, beat margarine, sugar and egg until fluffy. Beat in bananas and vanilla until smooth. Gradually stir in flour mixture and oats until well combined. Refrigerate dough for 30 minutes.

Meanwhile, preheated oven to 400°. Lightly grease cookie sheets. Drop batter by rounded teaspoonfuls 2 inches apart onto cookie sheets. Bake 10 to 12 minutes until light brown. Do not overbake. Cool and store in cookie tins.
