Ingredients/Components
- sifted flour
- baking powder - 1 tsp
- sugar
- soda - 1 tsp
- salt - 3/4 tsp
- shortening
- buttermilk - 1/4 c
- mashed, ripe bananas - 1 c
- large egg unbeaten - 1 item
- Add ingredients in Part 2; beat 2 minutes on medium speed
- confectioners sugar - 3 c
- lemon juice - 1/2 tsp
- vanilla - 1/2 tsp
How to make banana cake:
Part 2:1/2 c. shortening1/4 c. buttermilk1 c. mashed, ripe bananas Part 3:1/4 c. buttermilk1 large egg (unbeaten) Sift together all ingredients in Part 1. Add ingredients in Part 2; beat 2 minutes on medium speed. Scrape bowl and beaters frequently. Add ingredients in Part 3. Beat for 2 minutes as before. Stir in 1/2 cup of nuts, if desired. Pour in 2 round 8-inch layer cake pans and bake 30 to 35 minutes or until done.Icing For Cake:1/2 c. margarine3 c. confectioners sugar1/3 c. mashed, ripe bananas1/2 tsp. lemon juice1/2 tsp. vanilla Cream together until light and fluffy.Recipe categories: Desserts, Cakes, < 60 mins.
