Ingredients/Components

  • plain flour - 2 c
  • sugar - 2/3 c
  • baking powder - 2 tsp
  • salt - 1/2 tsp
  • soda - 1/4 tsp
  • nutmeg - 1/4 tsp
  • canola oil - 1/3 c
  • skim milk - 1/3 c
  • eggs - 2 item
  • ripe bananas - 3 item

How to make banana bread:

Put eggs, oil, milk and bananas in blender or food processor. Mix well on low speed. Sift together flour, sugar, baking powder, soda, salt and nutmeg. Add to blender. Mix on low speed until moistened.

Bake in a 350° oven until bread pulls away from sides of pan and springs back in the middle when lightly touched. This will make 1 large loaf or 4 small ones. Bake large loaf about an hour, small ones about 40 minutes.

I usually try to have a dozen bananas and make 4 batches, one right after the other. I only have one mess to clean and several loaves of bread to give as gifts or freeze.
