- cream cheese - 4 oz
- vanilla - 1 tsp
- water - 2 c
- pinch of salt - 1 item
- powdered sugar - 4 Tbsp
- whipping cream - 1 c
- dried apricots - 12 oz
- white sugar - 6 Tbsp
- orange Jell-O
- pie crust - 1 item
How to make apricot pie:
Bake crust in a 10-inch pie plate. Place water and apricots in saucepan and bring to a boil, simmer 10 minutes. Mix cream cheese, powdered sugar and vanilla until smooth; whip cream and fold into cream cheese mixture. Pour into pie crust and place in refrigerator until apricot topping is ready. Put jello in large bowl. Measure 2 cups hot juice from cooked apricots. Add juice to jello and stir until it is dissolved. Whip apricots with 6 tablespoons sugar and add to gelatin mixture.
