Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour - 4 c
  • soda - 2 tsp
  • baking powder - 4 tsp
  • all-purpose flour
  • cream of tartar - 1 tsp
  • cloves - 2 tsp
  • allspice - 1 tsp
  • applesauce - 2 c
  • chopped pecans optional - 1 c
  • sticks margarine soft - 2 item
  • + 1 1/2 Tbsp - 3/4 c
  • salt scant measurement * - 3/4 tsp
  • butter flavor Crisco, well chilled* - 3/4 c
  • egg, well chilled and slightly beaten - 1 item

How to make applesauce muffins:

*If substituting butter or margarine for the butter flavor Crisco, reduce milk to only 3/4 cup and reduce amount of salt to 1/4 to 1/2 teaspoon.

Preheat oven to 350°. Grease 12 regular size muffin cups. For best results, do not use paper liners, because muffins brown better on the sides and bottom when baked without them. Combine flour, sugar, baking powder, cream of tartar and salt in a large bowl. Cut in chilled Crisco with pastry blender only until mixture resembles coarse crumbs. Stir in milk and egg, only until flour mixture is moistened. Do not overmix! Spoon evenly into prepared muffin cups. Bake in a 350° oven for about 20 to 25 minutes, or until golden. Remove from pan. Cool on wire rack. Yield: 12 muffins.

Tip: These muffins taste like baking powder biscuits but are easier and quicker to make. Serve them with butter, jelly or honey.
