  • butter, softened - 3/4 c
  • sugar - 1/2 c
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • butter - 5 Tbsp
  • grated lemon rind - 1 tsp
  • sifted all-purpose flour
  • ground cinnamon - 1/2 tsp
  • ground nutmeg - 1/4 tsp
  • fresh lemon juice - 1 Tbsp
  • large egg, lightly beaten - 1 item
  • plus 3 Tbsp - 2 c
  • Crumb Topping - 1 item
  • peeled, cored and grated assorted apples - 5 c

How to make apple pie bars:

Crumb Topping:3/4 c. sifted all-purpose flour1/3 c. sugar5 Tbsp. butter Heat oven to 425°. Grease a 13 x 9-inch baking pan.

Prepare Crumb Topping and set aside. Stir flour and sugar, cut in butter to resemble coarse crumbs.

To prepare bottom: In small bowl, combine 2 cups flour and the salt; set aside. In large bowl, with electric mixer on medium speed, beat butter and 1/4 cup sugar until combined. Add egg and beat until smooth. Stir in vanilla. Gradually add flour mixture until soft dough forms. With fingers, press dough evenly into greased pan.

In large bowl, combine remaining 1/4 cup sugar, remaining 3 tablespoons flour, lemon rind, cinnamon and nutmeg. Fold in apples and lemon juice. Spoon apple mixture over dough in pan. Top with Crumb Topping. Bake 25 to 30 minutes until golden brown. Cool completely on wire rack. Refrigerate until ready to serve. Cut into bars.
