Ingredients/Components
- sugar - 1 c
- cinnamon - 1/2 tsp
- eggs - 2 item
- vanilla - 1 tsp
- butter or margarine - 1/2 c
- salt - 1/2 tsp
- flour - 2 c
- baking soda - 1 tsp
- vegetable shortening - 1/2 c
- apples, peeled and chopped - 2 c
- buttermilk or mix 1/4 c - 1/4 c
How to make apple muffins:
Topping:2 Tbsp. sugar1/2 tsp. cinnamon Using a mixer, cream together the shortening, butter and sugar. Add vanilla, buttermilk and eggs. In another bowl, sift together the flour, baking soda, salt and cinnamon; add to the shortening mixture. Fold in chopped apples. Pour into muffin pans (greased).Combine sugar and cinnamon and sprinkle on top. Bake at 400° for 25 minutes or until a knife inserted in the middle comes out clean. Makes approximately 18 muffins.
