Almond cookies
Ingredients/Components
- granulated sugar - 2 Tbsp
- flour - 3/4 c
- baking powder - 1/2 tsp
- dash of salt - 1 item
- light brown sugar, packed - 1/4 c
- ground cinnamon - 1/2 tsp
- olive oil - 3 Tbsp
- egg, lightly beaten - 1 item
- natural almonds, coarsely chopped - 1 c
How to make almond cookies:
Spray a 9-inch square baking pan with olive oil cooking spray. Combine almonds, flour, sugars, cinnamon, baking powder and salt in a large bowl. Stir in egg and olive oil until blended. Transfer to prepared pan and, with floured fingers or spatula, press dough evenly into pan. Bake at 325° for 20 minutes. Remove from oven. Cut into diamonds. Return pan to oven and bake 20 minutes more. Cool before carefully removing cookies from pan. Yield: 20 small cookies.Recipe categories: Desserts, Drop cookies, Cookie and brownie.
