  • sugar - 1 c
  • cinnamon - 1 tsp
  • salt - 1/2 tsp
  • flour - 2 c
  • nutmeg - 1/2 tsp
  • baking powder - 1/2 tsp
  • baking soda - 1 tsp
  • egg - 1 item
  • shortening - 1/2 c
  • raisins - 1 c
  • cloves - 1/4 tsp
  • zucchini, peeled and shredded - 1 c

How to make zucchini raisin cookies:

In mixing bowl, cream shortening and sugar. Add egg and beat well. Stir in zucchini; set aside. Combine flour, baking soda, spices, baking powder and salt. Add to zucchini mixture and stir until thoroughly combined. Stir in raisins. Drop by rounded teaspoonfuls 2-inches apart on greased cookie sheets. Bake at 375° until golden brown for 12 to 15 minutes. Cool in pans for 2 minutes before removing to wire rack. Cookies are cake like. Makes 3 dozen.
