Zucchini raisin cookies
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- nutmeg - 1/2 tsp
- baking powder - 1/2 tsp
- baking soda - 1 tsp
- egg - 1 item
- shortening - 1/2 c
- raisins - 1 c
- cloves - 1/4 tsp
- zucchini, peeled and shredded - 1 c
How to make zucchini raisin cookies:
In mixing bowl, cream shortening and sugar. Add egg and beat well. Stir in zucchini; set aside. Combine flour, baking soda, spices, baking powder and salt. Add to zucchini mixture and stir until thoroughly combined. Stir in raisins. Drop by rounded teaspoonfuls 2-inches apart on greased cookie sheets. Bake at 375° until golden brown for 12 to 15 minutes. Cool in pans for 2 minutes before removing to wire rack. Cookies are cake like.
