Zucchini bread
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 3 item
- salt - 1 tsp
- flour - 3 c
- oil - 1 c
- baking powder - 1 tsp
- baking soda - 3/4 tsp
- chopped nuts optional - 1 c
- raisins - 1 c
- shredded, unpeeled zucchini - 2 c
How to make zucchini bread:
Mix all ingredients, except eggs and oil, in a large mixing bowl. In a small bowl beat the eggs and oil. Pour the egg mixture over the flour mixture and stir until moistened. Turn into a 9 x 5 x 3-inch bread pan. Bake in 350° oven for 1 hour and 30 minutes or until pick inserted in center comes out clean. Cool in pan 10 minutes (at least).
