Ingredients/Components

  • sugar
  • cinnamon - 1 tsp
  • eggs - 3 item
  • salt - 1 tsp
  • flour - 3 c
  • oil - 1 c
  • baking powder - 1 tsp
  • baking soda - 3/4 tsp
  • chopped nuts optional - 1 c
  • raisins - 1 c
  • shredded, unpeeled zucchini - 2 c

How to make zucchini bread:

Mix all ingredients, except eggs and oil, in a large mixing bowl. In a small bowl beat the eggs and oil. Pour the egg mixture over the flour mixture and stir until moistened. Turn into a 9 x 5 x 3-inch bread pan. Bake in 350° oven for 1 hour and 30 minutes or until pick inserted in center comes out clean. Cool in pan 10 minutes (at least). Invert on rack; turn top side up.
