Zucchini nut bread

Ingredients/Components

• sugar - 2 c
• cinnamon - 1 tsp
• vanilla - 2 tsp
• salt - 1 tsp
• flour - 3 c
• oil - 1 c
• soda - 1 tsp
• eggs, beaten - 3 item
• baking powder - 1 tsp
• nuts
• coconut optional - 1/2 c
• raw zucchini, grated - 3 c

How to make zucchini nut bread:

Combine all ingredients and mix well. Make 2 loaves or one 9 x 13-inch cake. Bake at 350° for 1 hour and 10 minutes. Bake 30 to 35 minutes for 6 small loaf pans. Check with toothpick for doneness.
