  • sugar - 2 c
  • cinnamon
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • baking powder - 1/2 tsp
  • baking soda - 2 tsp
  • vegetable oil - 1 c
  • plain flour - 3 c
  • nuts, chopped - 1 c
  • shredded zucchini - 2 c
  • can drained pineapple - 1 1/2

How to make zucchini bread:

Mix the eggs, sugar, oil and vanilla with the zucchini and pineapple. Fold in the sifted, dry ingredients and nuts. Bake at 350° for 1 hour. Makes two large or three small loaves.
