Tropical chicken salad
Ingredients/Components
- sugar - 2 Tbsp
- salt - 1 tsp
- salad oil - 3/4 c
- paprika - 1 tsp
- orange juice - 1/2 c
- fresh strawberries - 1 c
- thinly sliced celery - 1/2 c
- celery seed - 1/2 tsp
- green grapes - 1 c
- cooked, diced chicken - 2 c
- banana, sliced - 1 item
- finely minced green onion - 2 Tbsp
- Mandarin oranges, drained - 1 can
- small cantaloupe - 1 item
- small honeydew melon - 1 item
- Orange Dressing - 1 item
- fresh crisp lettuce leaves - 1 item
- Orange Dressing:1 egg
How to make tropical chicken salad:
Orange Dressing:1 egg1/2 c. orange juice2 Tbsp. sugar1 tsp. salt1 tsp. paprika1/2 tsp. celery seed3/4 c. salad oil Put egg, orange juice, sugar, salt, paprika and celery seed in blender. Turn machine on slow. Slowly drizzle in salad oil to make smooth but slightly runny dressing. Makes about 1 1/4 cups.Place chicken into large mixing bowl and chill. Halve the cantaloupe and melon. Remove seeds, peel and dice or cut into balls. Combine chicken, oranges, grapes, strawberries, banana, celery and onion. Toss to blend. Just before serving add 1/2 cup Orange Dressing to salad. Turn into lettuce lined bowl. Serve extra dressing on table.
