Tropical chicken salad
Ingredients/Components
- lettuce leaves - 1 item
- fresh strawberries - 1 c
- cooked diced chicken - 2 c
- sliced celery - 1 c
- green grapes - 1 c
- minced green onions - 2 Tbsp
- banana, sliced optional - 1 item
- small cantaloupe - 1 item
- small honeydew melon - 1/2 item
- Orange Dressing - 1 item
- can Mandarin oranges or fresh orange segments - 1 oz
How to make tropical chicken salad:
Cook, dice and chill chicken. Dice or cut with melon baller into balls the cantaloupe and honeydew melons.Combine in large bowl chicken, melons, orange segments, grapes, strawberries, celery and onions (banana, if used). Toss to blend. Add 1/2 cup Orange Dressing. Turn into lettuce lined bowl or individual plates. Serve extra dressing at table.
