  • sugar - 3 c
  • chopped pecans - 1 qt
  • butter - 1 lb
  • eggs, separated - 7 item
  • soda - 1 tsp
  • plain flour - 5 c
  • candied cherries - 1 lb
  • candied pineapple - 1/2 lb
  • bottle lemon extract - 2 oz

How to make texas pecan cake:

Cream sugar and butter. Add flavoring and egg yolks, one at a time. Beat well. Mix soda in flour. Pour 2 1/2 cups flour over nuts and candied fruits in a large pan. Pour your batter over the nut and candied fruit mix into the pan. Mix well. Beat the egg whites and fold in mixture. Bake 4 hours at 225° in a large tube pan.
