Tamale pie
Ingredients/Components
- sugar - 1 Tbsp
- salt - 1/2 tsp
- butter - 1 Tbsp
- cold water - 2 c
- chopped onion - 1/2 c
- chili powder - 2 tsp
- can tomatoes, cut up - 1 oz
- can tomato sauce - 1 oz
- clove garlic - 1 item
- ground beef - 1 lb
- grated Cheddar cheese - 1 c
- yellow cornmeal
- black pepper - 1 item
- pitted ripe olives - 1/2 c
- green pepper, chopped - 1 item
- can whole kernel corn - 1 item
How to make tamale pie:
Crust:3/4 c. yellow cornmeal1/2 tsp. salt2 c. cold water1/2 tsp. chili powder1 Tbsp. butter To make filling, brown ground beef, onion and green pepper; drain. Add the remaining ingredients, except for cheese. Bring to boil; simmer, uncovered, for 20 minutes or until thickened. Add the cheese; stir until melted. Set aside.To make crust, combine cornmeal, salt, water and chili powder in saucepan. Cook on medium-high, stirring constantly, until thick. Add butter; mix well.
Spread half of crust mixture over bottom of 12 x 8 x 2-inch baking dish. Add filling; spoon on the remaining crust.
Bake at 375° for 45 minutes. Top with 1/2 cup of grated cheese, if desired.
