Ingredients/Components

  • sugar - 1 c
  • pkg - 1 oz
  • packed brown sugar - 1 c
  • milk - 1/2 c
  • vanilla extract - 1 tsp
  • flour - 1/2 c
  • melted margarine - 2/3 c
  • eggs, beaten - 2 item
  • flaked coconut
  • mashed sweet potatoes - 3 c

How to make sweet potato crunch:

Combine first 5 ingredients with 1/3 cup margarine in bowl, mixing well. Spoon into baking dish. Combine remaining 1/3 cup margarine, coconut, pecans, brown sugar and flour in bowl, mixing until crumbly. Sprinkle over sweet potatoes. Bake at 350° for 20 minutes or until brown.
