Stuffed acorn squash
Ingredients/Components
- eggs - 2 item
- salt - 1/2 tsp
- butter - 1 item
- fine bread crumbs - 2 Tbsp
- salt and pepper to taste - 1 item
- grated Cheddar cheese - 1 c
- grated onion - 1 Tbsp
- small or 1 medium size acorn squash - 2 item
How to make stuffed acorn squash:
Boil whole squash in salted water until almost tender. Remove tops to make cavities for stuffing. Scoop out stringy insides and discard. Drain water that collects. Beat eggs until frothy. Add grated onion, cheese, bread crumbs, salt and pepper.Put bits of butter in each cavity of squash. Fill with the stuffing. Place in a foil-lined pan and bake in a 350° oven for 30 minutes.
