Spanish chicken
Ingredients/Components
- pkg - 1 oz
- salt - 1 tsp
- boiling water - 2 c
- shortening - 3 Tbsp
- pepper - 1/4 tsp
- clove garlic, minced - 1 item
- chopped onion - 1/2 c
- long grain rice - 1 c
- tomato juice - 1 c
- chicken, cut up - 1 (3
- chopped pimiento - 1/4 c
- cubes chicken bouillon - 2 item
How to make spanish chicken:
Season chicken with salt and pepper. Brown in melted shortening. Add onion and garlic; cook until onion is just tender. Dissolve bouillon cubes in boiling water; add 1/2 cup broth to chicken along with the tomato juice. Cover; simmer 20 minutes.Add rice and remaining 1 1/2 cups broth. Simmer, covered, 20 minutes. Add peas and pimiento and simmer 5 minutes more or until peas are tender and rice is done. Stir once or twice. Makes 4 or 5 servings.
