Chicken fricassee

- flour - 1/2 c
- chicken, cut up - 1 (3
- shortening - 2 Tbsp
- chopped celery - 1/2 c
- chopped onion - 1/4 c
- can condensed cream of mushroom soup - 1 oz
- water - 3/4 c
- chopped pimiento - 2 Tbsp
- hot cooked rice - 1 item
- salt - 1 tsp
- pepper - 1/8 tsp
How to make chicken fricassee:
In a plastic bag combine flour, salt and pepper. Add chicken pieces, a few at a time, shake to coat. In skillet brown chicken in the shortening. Transfer to a 3-quart casserole. In same skillet cook celery and onion until tender but not brown. Drain fat. Stir in soup, water and pimiento. Pour over chicken. Cover. Bake at 350° until tender, about 1 hour. Serve with rice.
