How to make sourdough starter:

Mix dry yeast with 1/2 cup warm water. Combine sugar, remaining water and potato flakes. Stir; add yeast mixture. Stir. Loosely cover with plastic wrap with a couple of air holes punched in it. Let stand all day. Refrigerate that night. After 3 days, take out and feed.Sourdough Feeder:1 c. warm water3/4 c. sugar3 Tbsp. potato flakes Mix all ingredients. Add to starter. Allow starter to stay out of refrigerator all day. This should not rise, but will start bubbling. At the end of the day (or 12 hours), remove 1 cup of starter to use in making bread. Return remainder to refrigerator. Keep 3 to 5 days, then feed again. If not making bread, give 1 cup of starter away or throw it away. Return remainder to refrigerator.Sourdough Bread:1/4 c. sugar1/2 c. oil1 1/2 c. warm water1 Tbsp. salt1 c. Starter6 c. bread flour Combine all ingredients in a large bowl. Stir with a wooden spoon until a stiff dough is formed. Oil another large bowl. Put dough in bowl and turn it over so oiled side is up. Oil a large piece of waxed paper. Place over bowl; cover with a towel. Allow to stand overnight or until dough has doubled. Punch dough down. Knead for 3 or 4 times (too much kneading releases the gases needed for rising). Divide into 2 equal parts. Place each into a greased 5 x 9-inch loaf pan. Let rise all day or until doubled. Bake on bottom rack in a 350° oven for 30 to 40 minutes. Remove from pans and brush with melted butter. Cool on rack. Wrap well to store. Can be frozen.
