Sour cream potato salad
Ingredients/Components
- sour cream - 1/2 c
- mayonnaise - 1 c
- sliced celery - 3/4 c
- hard-boiled eggs - 4 item
- sliced green onions and tops - 1/3 c
- Italian dressing - 1/3 c
- salt and celery seed to taste - 1 item
- prepared horseradish mustard
- diced pared cucumber - 1/3 c
How to make sour cream potato salad:
While potatoes are warm, pour dressing over and chill for 2 hours. Add celery and onion. Chop egg whites; add. Sieve yolks; reserve some for garnish. Combine remaining sieved yolk with mayonnaise, sour cream and horseradish mustard. Fold into salad. Add salt and celery seed to taste. Chill salad. Add diced cucumber to trim; sprinkle reserved sieved yolk and sliced onion tops over top of salad. Serves 8.Recipe categories: Salads, Potato, Vegetables.
