  • flour
  • baking powder - 3/4 tsp
  • baking soda - 3/4 tsp
  • large eggs - 2 item
  • pumpkin pie spice - 1 tsp
  • packed light brown sugar - 1 c
  • margarine, melted - 1/2 c
  • lemon extract - 3/4 tsp
  • chopped walnuts optional - 1/2 c
  • sour cream can add a little more - 2/3 c
  • 1/2 to 2 large Granny Smith apples, peeled and sliced thin - 1 item

How to make sour cream apple cake:

Heat oven to 350°. Mix flour, sugar and pumpkin pie spice in an ungreased 8-inch square pan with a fork. Add butter and stir until mixture resembles coarse crumbs. Set aside 1/2 cup crumbs.

Add baking soda, baking powder and lemon extract. Stir to blend. Add sour cream and eggs; stir until blended smoothly. Using a rubber spatula, scrape ingredients clinging to sides, corners and bottom of pan. Arrange apple slices in rows on batter. Sprinkle reserved crumbs and then walnuts over top. Bake 55 to 60 minutes, until a toothpick comes clean.
