Shredded carrot salad
Ingredients/Components
- shredded coconut - 1/2 c
- whipping cream - 1 c
- seedless raisins - 1 c
- mayonnaise - 1 c
- tiny marshmallows - 1 c
- shredded carrots* - 3-1/2 c
- pineapple tidbits or pineapple cut in 1/2 inch pieces - 3/4 c
How to make shredded carrot salad:
Peel and shred, or grate, carrots. Add marshmallows, pineapple, raisins and coconut. Mix lightly. Combine carrot mixture with mayonnaise; carefully fold in whipped cream. Refrigerate at least one hour. This freezes well!*1 pound carrots = 3-1/2 cups.
Note: This salad is delicious if eaten frozen or thawed and served as fresh. Serves 6 to 8.
