Ingredients/Components
- butter - 3 Tbsp
- long grain rice - 8 oz
- bay leaf - 1 item
- saffron - 1/2 tsp
- chicken stock - 3 c
- can mandarins, drained - 1 oz
- blanched almonds, grated - 2 tsp
- finely chopped mandarin peel - 1 tsp
How to make rice:
Cover bottom of hot ovenproof pan with butter, swish to cover bottom. Mix rice with mandarin peel, put in pan and stir to coat rice with butter. Cook over low heat for 2 minutes, stir constantly. Pour chicken stock over rice, add saffron and bay leaf, salt and pepper to taste. Mix all ingredients. Place in 450° oven for 20 minutes. When rice is cooked, all liquid absorbed, remove bay leaf. Add almonds and mandarin segments. Serve warm. Serves 4 to 6.Recipe categories: Low protein, Low fat, Side dish.
