Ingredients/Components

  • sugar - 1-1/2 c
  • milk - 1 c
  • salt - 1/2 tsp
  • cornstarch - 2 Tbsp
  • baking soda - 1/8 tsp
  • inch pie shell, baked - 9 item
  • rhubarb, cooked - 2 c
  • egg yolks use whites to make meringue - 3 item

How to make rhubarb custard pie:

Mix sugar, cornstarch, salt and soda together. Add milk, mix well. Fold in rhubarb. Beat egg yolks and add to rhubarb mixture. Cook in double boiler until thick. Pour into 9 inch baked pie shell. Cover with meringue and bake until brown at 350°.
