Rhubarb custard pie
Ingredients/Components
- sugar - 1-1/2 c
- milk - 1 c
- salt - 1/2 tsp
- cornstarch - 2 Tbsp
- baking soda - 1/8 tsp
- inch pie shell, baked - 9 item
- rhubarb, cooked - 2 c
- egg yolks use whites to make meringue - 3 item
How to make rhubarb custard pie:
Mix sugar, cornstarch, salt and soda together. Add milk, mix well. Fold in rhubarb. Beat egg yolks and add to rhubarb mixture. Cook in double boiler until thick. Pour into 9 inch baked pie shell. Cover with meringue and bake until brown at 350°.Recipe categories: Desserts, Pie, Pies and tarts.
