Refrigerator bran muffins
Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- soda
- buttermilk - 2 c
- boiling water - 1 c
- unsifted flour
- salad oil - 1/2 c
- eggs, slightly beaten - 2 item
- whole bran or Bran Buds cereal - 3 c
- dried fruit raisins, dates, apricots - 1 c
How to make refrigerator bran muffins:
In a large bowl, mix bran cereal with boiling water, stirring to moisten evenly. Set aside to cool. Add eggs, buttermilk, oil and fruit. Blend well. Stir together soda, salt, sugar and flour. Add to bran mixture. Bake now or refrigerate in a tightly covered container for up to two weeks. Spoon batter into muffin cups 2/3 to 3/4 full. Bake at 425° for 20 minutes.
