Ingredients/Components
- salt and pepper to taste - 1 item
- medium onion, chopped - 1 item
- cooked rice - 1 item
- bell pepper, chopped - 1/3 item
- smoked sausage - 1 lb
- red beans, sorted and washed - 1 lb
How to make red beans and rice:
Soak beans overnight in water to cover. In same soaking water, bring beans to a boil. Lower heat and simmer for 1 1/2 to 2 hours. Add smoked sausage, onion, bell pepper, salt and pepper. Simmer another 1 1/2 hours or until beans and sausage are tender. Serve over cooked rice.Recipe categories: Pork, Beans, Rice.
