  • pkg - 1 oz
  • vanilla extract - 1 tsp
  • salt - 1/8 tsp
  • confectioners sugar - 1/3 c
  • boiling water
  • lemon juice - 1 Tbsp
  • large container Cool Whip - 1 item
  • graham cracker crust - 1 item
  • fresh raspberries for garnish - 1 item

How to make raspberry ribbon pie:

In medium bowl, stir gelatin and boiling water until crystals are dissolved. Add the frozen berries and lemon juice. Stir until berries thaw. Cover and refrigerate until the mixture mounds when dropped with a spoon.

In a small bowl with a whisk, mix the cream cheese in confectioners sugar, vanilla extract and salt until smooth. Put half of Cool Whip in another small bowl, fold in the cream cheese mixture gently. Spread the cream cheese mixture into the crust. Spoon the Jell-O mixture over it. Cover the whole pie with reserved Cool Whip. Garnish with fresh raspberries and mint leaves (if you can get them).
