  • brown sugar - 1 c
  • nutmeg - 1/4 tsp
  • oil - 1/2 c
  • baking powder - 1/2 tsp
  • baking soda - 1/2 tsp
  • pumpkin - 3/4 c
  • egg - 1 item
  • shortening - 3/4 c
  • powdered sugar - 1 c
  • ginger - 3/4 tsp
  • cloves - 1/2 tsp
  • Filling:1 egg white, beaten

How to make pumpkin whoopie pies:

Filling:1 egg white, beaten2 Tbsp. milk1 tsp. vanilla1 c. powdered sugar3 oz. cream cheese3/4 c. shortening1 c. powdered sugar Cake: Preheat oven to 350°. Cream brown sugar and oil in large mixing bowl. Add pumpkin and eggs. In a separate bowl, combine flour, salt, baking powder, baking soda and the spices. Add dry ingredients to liquid and mix well. Stir in vanilla. Drop by heaping teaspoonfuls onto greased cookie sheet. Bake 10 to 12 minutes. Cool on racks before filling.

Filling: Beat egg white, vanilla, 1 cup powdered sugar and cream cheese in large mixing bowl until light and fluffy. Blend in shortening and remaining 1 cup of powdered sugar. Beat until thick and creamy. Put filling on inside of one of the cookies and place a second cookie on top to form a sandwich.
