  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • pkg - 2 oz
  • salt - 1/2 tsp
  • flour - 3/4 c
  • butter - 4 tsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar
  • ginger - 1 tsp
  • lemon juice - 1 tsp
  • finely chopped pecans optional - 1 c

How to make pumpkin roll:

Filling:1 c. powdered sugar4 tsp. butter1/2 tsp. vanilla2 (3 oz.) pkg. cream cheese, softened Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Stir together flour, baking powder, salt and spices; fold into pumpkin mixture. Pour into a well greased and floured 15 x 10 x 1-inch pan. Top with 1 cup finely chopped nuts. Bake at 375° for 15 minutes. Immediately turn out on a towel sprinkled with powdered sugar. Start at narrow end and roll cake and towel together to cool.

Prepare filling by beating ingredients together. When cake is cool, unroll and spread with filling. Reroll and refrigerate.
