Pumpkin roll
Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1/2 tsp
- flour - 3/4 c
- butter
- baking powder - 1 tsp
- powdered sugar - 1 c
- canned pumpkin - 3/4 c
- pumpkin spice - 1/2 tsp
- lemon juice - 1 tsp
How to make pumpkin roll:
Filling:1/2 c. butter1 (8 oz.) pkg. cream cheese1 tsp. vanilla1 c. powdered sugar Beat eggs for 5 minutes. Add sugar, pumpkin and lemon juice. Fold in dry ingredients. Grease and flour a cookie sheet. Pour mixture on the cookie sheet and bake at 350° for 15 minutes. Sprinkle powdered sugar on a towel. Loosen baked pumpkin mixture with spatula. Put on towel and roll up in the towel. Put in the refrigerator.Unwrap and spread with the filling. Wrap back up, without towel, but with foil. Refrigerate for 2 hours.
