Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- nutmeg - 1/2 tsp
- confectioners sugar - 1 c
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- Slowly add sugar; beat on low for 4 minutes
How to make pumpkin roll:
Mix eggs alone for 1 minute. Slowly add sugar; beat on low for 4 minutes. Add pumpkin; scrape bowl well. Combine all dry ingredients and add to pumpkin mixture, mix for 1 minute. Line jelly roll pan (cookie sheet) with waxed paper and grease the paper generously. Pour mix into pan and bake 12 to 15 minutes at 375°. Turn cake onto towel that has been sprinkled with confectioners sugar; remove wax paper. Roll cake and towel up together. Cool completely.Filling:6 oz. cream cheese4 Tbsp. butter1/2 tsp. vanilla1 c. confectioners sugar Cream cream cheese and butter together. Add vanilla and confectioners sugar; beat vigorously.
