Ingredients/Components
- flour
- baking soda - 2 tsp
- salt
- cinnamon
- nutmeg - 1 tsp
- sugar - 1 c
- oil - 1 c
- eggs or egg substitutes or 8 egg whites - 4 item
- water - 2/3 c
- canned pumpkin - 2 c
- chopped pecans - 1 c
How to make pumpkin pecan bread:
Sift together flour, salt, soda, cinnamon and nutmeg. Add sugar and stir to mix thoroughly. Make a well in the center of dry ingredients and add, all at once, oil, eggs, water and pumpkin. Mix well; add nuts. Pour batter into four 8 x 4-inch loaf pans, filling each half-full. Bake at 350° for 1 hour, or until a wooden toothpick inserted in the center of the loaf comes out clean.
