Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • egg - 1 item
  • shortening - 3/4 c
  • all-purpose flour - 2 c
  • stick margarine, softened - 1/2 item
  • cooked pumpkin can or fresh - 1 c

How to make pumpkin cookies:

Cream together the margarine, sugar, pumpkin and shortening. Add the egg and vanilla, mixing well. Stir in remaining ingredients. Drop dough by teaspoonful onto well-greased cookie sheets. Bake at 350° for 12 to 15 minutes. Makes 3 to 4 dozen. Can be iced with Cream Cheese Frosting recipe.
