Ingredients/Components
- sugar
- cinnamon - 3 tsp
- eggs - 4 item
- salt - 1 tsp
- flour
- nutmeg - 2 tsp
- oil - 1 c
- soda - 2 tsp
- pumpkin
- ginger - 1/4 tsp
- cloves - 1/2 tsp
How to make pumpkin bread:
Sift together flour, soda, salt, nutmeg, cinnamon, cloves and ginger. Cream together sugar and eggs. Stir in oil. Mix well. Stir in pumpkin. Stir flour mixture into the creamed mixture. Fold in 1 cup chopped pecans. (Mix the chopped pecans with a tablespoon of the flour mixture before folding into the batter.) Pour into well-greased pans.Mini-Muffins: Bake 15 minutes at 350°.
Loaf Pans: Bake 1 hour at 350°.
One Pound Coffee Cans: Bake 1 hour at 350°.
