Ingredients/Components

  • salt - 3/4 tsp
  • eggs, beaten - 2 item
  • baking powder - 1/2 tsp
  • all-purpose flour - 1/2 c
  • applesauce - 1 item
  • pepper - 1/4 tsp
  • medium onion, finely chopped - 1 item
  • diced, cooked ham - 1 c
  • Wesson oil - 1 item
  • large baking potatoes, peeled and shredded - 3 item

How to make potato pancakes:

In medium bowl, combine all ingredients except oil and applesauce. In large skillet, heat 1/4 cup oil over medium to low heat. In hot oil, spoon about 3 tablespoons potato mixture per pancake into skillet and flatten slightly. Cook pancakes, turning once while cooking, until golden brown on each side. Add oil as needed to cover bottom of skillet. Drain on paper towels. Serve warm with applesauce. Makes 12 to 14 pancakes.
