Ingredients/Components
- salt - 1 tsp
- flour - 2 Tbsp
- baking powder - 1 tsp
- eggs, well beaten - 2 item
- medium potatoes - 4 item
How to make potato pancakes:
Chill pared potatoes in ice water for 2 hours before grating. Finely grate potatoes and measure 2 cups full. Place grated potatoes in towel and squeeze out water. Combine potatoes, eggs, flour, baking powder and salt. Drop by tablespoon onto hot, well-greased griddle. Cook over moderate heat about 5 minutes on each side, until golden brown.
