Jumbo raisin cookies
Ingredients/Components
- sugar - 2 c
- vanilla extract - 1 tsp
- salt - 2 tsp
- flour - 4 c
- water - 1 c
- soda - 1 tsp
- baking powder - 1 tsp
- shortening - 1 c
- nuts - 1 c
- raisins - 2 c
- eggs, well beaten - 3 item
- ground cinnamon
- ground nutmeg - 1/4 tsp
- ground allspice - 1/4 tsp
How to make jumbo raisin cookies:
Add water to raisins and boil 5 minutes. Set aside to cool. Cream shortening, sugar, eggs and vanilla extract. Add cooled raisins and water. Sift together the flour, baking powder, soda, salt, cinnamon, allspice and nutmeg. Add flour mixture to raisin mixture; blend well and add nuts. Chill dough, then drop by teaspoonfuls onto lightly greased cookie sheets. Bake at 375° for 10 to 12 minutes. Let cool for a few minutes on cookie sheet before removing to cake racks.
