Ingredients/Components

  • pinto beans - 1-1/2 c
  • cumin seeds - 1/2 tsp
  • bay leaf - 1 item
  • salt - 1 tsp
  • oil - 3 Tbsp
  • Tbsp mustard - 2-1/2 item
  • can tomato paste - 1/2 item
  • crushed pineapple and juice 8 oz - 1 c
  • basil - 1/2 tsp
  • nutmeg - 1/2 tsp
  • mustard seed - 1 tsp
  • cup water - 3 item

How to make pineapple baked beans:

Soak beans overnight. Cook beans with salt, bay leaf and cumin. Simmer in a tightly covered pot for about 2 hours. Add oil and continue cooking until beans are tender. Add more water if necessary. Add other ingredients. Salt and pepper to taste. Pour mixture into a casserole dish and place in a 275 degree oven for one hour or so. Can be made ahead and can be frozen.
