Pineapple baked beans
Ingredients/Components
- pinto beans - 1-1/2 c
- cumin seeds - 1/2 tsp
- bay leaf - 1 item
- salt - 1 tsp
- oil - 3 Tbsp
- Tbsp mustard - 2-1/2 item
- can tomato paste - 1/2 item
- crushed pineapple and juice 8 oz - 1 c
- basil - 1/2 tsp
- nutmeg - 1/2 tsp
- mustard seed - 1 tsp
- cup water - 3 item
How to make pineapple baked beans:
Soak beans overnight. Cook beans with salt, bay leaf and cumin. Simmer in a tightly covered pot for about 2 hours. Add oil and continue cooking until beans are tender. Add more water if necessary. Add other ingredients. Salt and pepper to taste. Pour mixture into a casserole dish and place in a 275 degree oven for one hour or so. Can be made ahead and can be frozen.(Total cooking time about 3 hours.) Serves 4.
