Ingredients/Components

  • grated Parmesan cheese - 1/2 c
  • salt optional - 1/4 tsp
  • firmly packed fresh basil leaves - 2 c
  • olive oil - 1/4 c
  • cloves garlic, peeled and chopped - 3 item
  • pine nuts traditional or walnuts - 1/4 c

How to make pesto:

In a food processor or blender, combine the garlic, salt (if desired) and oil. Process the ingredients until they are smooth. Add the basil and pine nuts or walnuts and process the ingredients until they are smooth. (You may need to stop the machine once or twice to scrape the bowl or jar.) Tip: For thinner sauce, add chicken or vegetable broth.

Transfer the mixture to a bowl and stir in the Parmesan cheese. Pesto can be frozen and keeps many months that way. Serve the pesto at room temperature.
